Originating in Asia, called Boba Tea, ‘tea with bubbles’ or Nǎichá, Bubble Tea is a refreshing dessert drink, to be enjoyed as a snack, at the end of a meal, or simply enjoyed and savoured in the company of friends. It is said to be the result of a mistake. It seems that franchise manager Liu Han-Chieh, during a meeting, accidentally slipped a ‘fen yuan’ (typical Taiwanese tapioca cake) into a glass containing iced tea. He liked the combination so much that he ‘patented’ it and sold it.

Whether this story is true or not, Bubble Tea became the ideal after-work drink to refresh at the end of a day. After a quick expansion in Asia, it soon became a fashion in the Western market in the 1990s too, first in America (even winning over a VIP like Hillary Clinton who called it ‘pleasantly chewy’) and then in Europe, becoming a worldwide trend today.

The basic elements of a Bubble Tea are tea, milk, a syrup and ‘bubbles’, also called ‘popping boba’. These are transparent pearls filled with sweet, creamy syrups, to be sucked through a straw and then gently chewed, as taught by Millennials.
